Good morning
On the bigger cisco phones (7961):
Let's say I have 2 lines on my phone, example my extension 1742 on line one, and my colleagues extension (john) on 1791 on line 2.
If John has an incomming call, but I answer it then I will be talking on his line. How do I transfer the call back to John's phone if I'm actually talking on his line?
I can't do a transfer, because I'm talking on his line.

the second line working in shared line mode
when you answer the call hi phone line should show in red
just enable the bargin feure on that line
this way he can intercept the call without trasfering it

If you have that line as dual you can transfer it to the same number, and John can Pick up the call in his phone.
A really bad method could be transfer first the call to your line and after that transfer it again to John's number

Or.... simple method... put the call on hold, and he can resume it.
It depends how close you are to the other party.
