Is there a reason I can't change a remote home office phone to sip rather

than using ASA phone proxy or using some kind of  vpn tunnel

The two reasons that come to mind immediately are:

  1. It would be entirely unsecure and would require you to expose your UCM servers directly to the Internet.
  2. Cisco Unified IP phones do not perform STUN or other NAT/firewall traversal. You might have difficulty getting the phone to function properly outside of TLS or VPN tunnel.
