I have a Cisco 877w and it seems the coverage seems to fluctuate between 11mbps to 54mbps between different hours of the day, I'm just wondering if a neighbouring wireless network could be using the same channel?  Or my settings are not optimal. How do I change the channel and/or are these settings not optimal, if I have missed some important config please let me know:

Before you do such radical moves, just check what signals are around you.  Netstumbler is a good free proggie.

How far are the clients from the wireless access points?
Are they behind brick/cinder blocks/cement walls?

If you want to nail down the channels to use, I'd recommend you HTTP/HTTPS into your router.
