I was able to get a translation to work on all inbound numbers, but I have a single fax on fxs0/1/0 that is getting lost in that translation.  Can someone assist in a translation that would see the fax number (555)555-1112 and point it off to the fxs?

You don't need any translation. Just place the number as it comes from telco, as destination-pattern in the DP pots for the relevant port.

Hello,

Coul you please let me know how many digits are you getting from the PSTN as DNIS to know how to manipulate them in the proper way. You could find that information in the output of the "debug voice ccapi inout"

The telco was bringing in 7 digits and the SIP server required 10. That was the issue.

I tested the translation and its doing the translation in the proper way, but since the fax calls are coming into a different port we need either create another incoming dial-peer for that or apply the translation rule to the voice port itself.
