You can learn quite a bit about the basics of Class of Service, Subscriber Templates, Subscriber features, and etc. from the Unity books. However, the configuration and theory of operation behind each product is completely different. Unity relies on AD/Exchange for a backend message store (even in a voicemail only configuration) where as Unity Connection is a standalone product. If you do not know Unity, then I would say that of the two - Unity Connection will be easier for you to pick up on as far as configuration and troubleshooting goes. Also read the CUCM SRND and focus on the messaging sections as it discusses deployment topologies, limitations, and etc.
