My recommendation would be CCNA Security > CCSP > CCIE Security along with experience. The timeframe to complete this journey is dependent on your experience (Cisco recommends 3-5 years), your current role and the amount of time you have to dedicate to studying. With some experience and a lot of dedication, I think 2 years is a reasonable goal. Some have done it much quicker. Many take longer. So, the answer is "It depends."

If my goal is just the CCIE Security do I need to know any of the R/S stuff as well? I'm asking because I keep hearing different answers.

R&S is certainly foundational to the Security exam. As such, you will see some degree of overlap. However, you will notice there are different objectives for each of these tracks. The Security exam is not a R&S exam, but a certain level of competancy with R&S will be expected. Not a definitive answer, but I hope it helps.
