Nothing; the UCM code and functionality are identical. UCM-BE has Unity Connections colocated on the server for a single-server solution.

Just to add a note to the great tips from Jonathan
Hereis a doc (attached) called "Selling Cisco Unified CommunicationsExpress". It gives a feature comparison between CME 4.0 and CCM 4 and5, as well as compares CUE to Unity and Unity Connection.This is an "older" doc but should still give you a baseline for the differences between CUCM and CME.
As for the other part of your enquiry;
CUCM-BE is a single server "all in one" platform.
