What´s the difference between CCM version 5.1, 6.1 and 7.1?

If you mean in fuctionalities, these are covered in the RNs for each version.

Release Notes

We're already on 8.X so I'd look at 6.1 as the earliest and drop 5.1.

The RNs for each version have a New and Changed Information chapter which explains what new features have been included on each release.
