Is there any reason for not using the UC5x0 in conjunction with an existing 3500-series switch? Don't need PoE, happy to configure using CLI ....

SBCS is a suite of products purpose built and tested as a solution for
Small buisness. The higher end switches are not managed by CCA or
supported, and TAC support will be problematic as well, depending on
whether you have Pro Service for a UC540/UC560 or Smartnet for a UC520
(may get bounced around).

I understand the issue re: what is designed for SMB and what isn't, and so implications for support. Your post implies that co-ordinating support and Pro/Smartnet overlap is the only problem area, would that be a correct assumption?

Yes and the Cisco Configuration Assistant part also. Platform support
for switches there is not unlimited. Managing the suite with CCA can
also include the switch, although granted, there is not much to
configure on it.
Keep in mind, we have a leave behind tool called Office Manger (OM)
and it only supports CCA configured systems as well.

I've been looking at the OM video & like the idea; I would guess most of the "leave behind" admin is likely to be telephony moves & changes rather than switch port configuration, so that's not an issue. In terms of the "main" switches (for example, the external switches - not the ports in the UC540), there should be little to do. If we put the "SMB" specific aspects of a network - e.g. an AP541N, a PVC300 - on the UC's own ports, then if I'm reading things right CCA can be used to manage all of those and they'll have to cope with the existing switches the same way as now.
I know it's a mix-and-match, and less than ideal, but it must be a fairly common possibility for customer deployments.

We have made the ESW switches so price competitive, that we actually
don't see more expensive, higher end switched used with UC500.
And just to be clear on OM, it doesn't read Non CCA configured
parameters and is advertised to Not Work on configurations where it
reads non CCA CLI. So it's not that you would configure switch port
roles or anything with OM, rather it could block you from anything IF
it didn't like what it read.
You may also find that everything works just fine, if it is merely the
switch fabric for clients and phones, but we don't claim it will.
Perhaps other Partners reading this thread can tell you of their
experience with non SBCS recommended switches. There gave been a few.
