I'm trying to reset the UC540 back to defaults using CCA and getting the following error....
"Default VLAN copy failed. Accessing tftp:/172.16.40.100/2566778499795....
%Error opening tftp:/172.16.40.100/2566778499795 (Timed out)"
Does anyone know what this means?
The IP here is the IP of my management PC, not sure why its trying to tftp to it.

Are you plugged into the UC500 LAN switch port (and not trying this over the WAN)?
Usually CCA will use Tftp to IOS and FTP to CUE, so have to allow these service to run only on CCA (you don't need any apps for that, cca does it for you. CCA will need to put a few files on flash. But this means you should not have any service on your PC bindingto ports 21,22, or 69 (netstat -a and netstat -b usually tell you if there are any when CCA is not opened).
Also, no dual NIC allowed (no wifi simultaneous).

you got me looking in the right direction....
The tftp request was coming from the UC500 loopback, 10.1.10.2, if memory serves.....
The PC I use has 3 interfaces, so I disabled the other 2 while I performed this work.
However, the interface I was using had no default route, so it couldn't find 10.1.10.2.
I didn't want to add a default route to this interface, as it is dedicated to the lab environment, so I just added a temporary route to the PC for 10.1.10.2
route add 10.1.10.2 mask 255.255.255.255 172.16.40.30
The 172.16.40.30 is the UC540 data interface on the lab network.

Good. Assuming that 172 address is your next hop GW for your PC, then consider 2 temp routes to CUE and CME below, but I always disable all other NICs and plug in directly to uc500....
Route add 10.1.10.0 mask 255.255.255.0 172.16.40.30
Route add 10.1.1.0 mask 255.255.255.0 172.16.40.30
