What parameters I have to configure to enable encriptaion of calls in the Call Manager Server, version 4.1?

Hi
lots of steps, which vary depending which products (gateways/phones etc) you have. Read the security guide for starters:

While you are reading that, you also need to order 2 KEY-CCM-ADMIN-K9 security keys to enable the cluster for 'mixed mode' security. No keys, no encryption.

To encrypt the calls between two IP phones just enough to set the value Device Security Mode to Encrypted?

After you go thru the whole process of creating the CTL file and using the 2 USB keys, getting the file to the phones... yes.
If you mean if you can just go right now and try to change it without the USB tokens and creating the CTL file, then no.
The whole process is outlined in the link Aaron posted, have you gone thru it?
