Just wondering does anyone have any suggestions what would be a good example of a real world scenario that we could use with our students in class to help get them really engaged in the CCNA/CCENT courses.

I have this problem too.

There are about 16 areas where a CCNA candidate will be asked to configure or now how to configure on the exam. Those area are as follows:

VLAN's

Trunking

Inter-VLAN routing

VTP

RSTP

DHCP

DNS

RIPv2

OSPF

EIGRP

ACL

ACL to limit Telnet and SSH

NAT

Basic WAN serial connection

Frame Relay

PPP between routers

When you read the exam topics, when the line says "Configure" that means any simulations you may get on the exam will be on those areas. If it says anything other than "Configure" you will be tested on theory. The biggest thing I can tell you is make sure they know how to use GNS3, it is a fantastic tool and invaluable in studying for Cisco exams, and especially if you can't afford to get real routers and switches.
