We are going to be upgrading our CCM Software shortly to CCM 8.5. I heard from a colleague of mine, that this can be run from a VM? Is this a true statement? If so, we'd really like to. But with further inspection, I saw that they only do that for a USC Box?
Anyone know for sure?

You can get CUCM on a VM since 8.0(2).
Initially it was only UC on UCS but now 3rd party servers are supported, bear in mind that if going that path we expect the partner/costumer to have a very good level of expertise to properly size the servers as we only provide guidelines of what you need to meet and we do not have a list of what models are supported or not.
