Server Farm Switches VS directly connected to Module

I know there is no right or wrong answer, but I am just curious the best way to approach this problem.

For Mission Critical IT such as Hospital, what is the best way to connect Virtual Servers such as HP C7000 Enclosure with HP Blade Servers and VMware VMs, and Physical Servers?  I  believe in having a dedicated Server Farm Switches for server connections and then uplink (2) 10Gb to Core/Distribution Switches.  On the other hand, Cisco does have a Server Farm Module such as Catalyst 6748 blade that can go directly into 6500 switches eliminating one extra hop.  But having a dedicated Server Farm switches with Line Rate port and larger buffer I dont think that an extra hop will make a big difference.

Anyway,  I am just curious what other forum users think?
