We have to move from 8.5 to 8.6 on CUCM. The question is do we have to upgrade Unity and UCCX at the same time? or if we only upgrade UCCX do we need to upgrade CUCM and Unity? Where is the most USEFUL upgrade process outlined for planning purposes?

You need to refer the Software compatibility matrix for all products and plan accordingly?

In addition to the useful information which should be read firstly , if you need to start upgrade . I think the you have to follow below:-
1-CUCM Publisher
2-CUCM Subscriber
3-UCCX ,or if you have UCCX nodes .Please start with UCCX pub then other nodes.
4-CUC,or if you have CUC nodes .Please start with CUC pub then other nodes
