Does anyone have experience with moving Unity to a different Exchange Organization?
- Suggesting that permissions are in place and the Exchange Alias for each mailbox is the same as in the old Exchange Organization
- What happens to the subscribers that exist in Unity ?
- Do they migrate ?
Or
Is a clean Unity install required for this move between Organizations, import the subscribers from Exchange and use Exmerge to extract old messages and import them into the new mailboxes?

Yes, a reinstall is necessary if you want to move between Exchange orgs. The migration wizard fro microsoft (which is not supported by microsoft) pretty much trashes any custom data during the move so that's just not an option.
If you're running 3.1(3) or later you might want to check out DiRT (Disaster Recovery Tools, found on AnswerMonkey.net or the CCO utilities page for Unity). It's designed to allow you to back up Unity data and mail users messages (using ExMerge) and import that back into a new install of Unity, regardless of changes in confgiuration, back end, etc... the help file should tell you what you need to know and there are a few training videos out on the AnswerMonkey.net site for it you might want to check out before deciding to pull the trigger on it.
