Is there an absolute maximum, or recommended maximum number of sub-interfaces you can hang off a serial port on a router like a 2611?

This number is defined by IDB limitations per platform and per IOS version. This URL explains them for 12.2. Also, for serial interfaces there are other limitations to be aware of. For example with Frame Relay there is a 10 bit DLCI field that will only allow so many terminated PVCs.
