If I have 2 routers connected via serial interfaces, will eigrp work if I use ip unnumbered on them, or do I have to use an ip so eigrp can router between them ?

In theory it should work as long as the IP address been "borrowed" also is part of the networks been advertised by EIGRP. For example if the "borrowed" IP address is 192.168.1.1 then you need to make sure you have the below on your config ..

eigrp

network 192.168.1.0 0.0.0.255
