network redundancy - order

Implementing network which includes IP readdress of entire network.

New network hardware is installed on new fiber parallel to the old network (although some old fiber will be used).

moving from 10.x to 172.16.x

changes to following:

servers

printers / print servers

end users

wireless

etc

my question is this: assuming all new hardware is in place and ready for migration, what are the best steps for MINIMUM downtime to migrate from old to new network?

would i add the old ip space (10.x) to the new equipment to allow for all traffic to pass until servers, devices, users are migrated to new ip space (172.16.x)?

you can also think of NAT which is useful during network transition.
