I am afraid the ACE does not any feature to do this.
You can modify the serverfarm, health probes, real servers, etc but you cannot change the name unless you remove it and create a new one with the name which you want.
Jorge is right, you cannot make changes to rservers,probes & serverfarms which are in prodcution. also you cannot create 2 rservers with same IP though you can create 2 or more serverfarms with same rserver & IP Address.
