Hello All,
I'm attempting to setup an 8821 wireless phone with the Agent Desktop for our helpdesk.
The interface on the phone is of course updated over the 7925 so I'm confused on how to configure it so they can log into CAD on it.
Can anyone help me?

Yes. Finesse IP Phone Agent (FIPPA) can be used to login to a phone only setup.

Looking at the compatibility matrix, I don't see it being supported, it is supported at 11.0, so you might be SOL.
