Is there a way to reset the counters to zero that are displayed by the Showall, Showstatus etc commands without stopping/starting the VB services?

The CVP VB has metrics for every interval which gets reset automatically at the end of interval. So, you could lower the value of metrics interval if you want the interval metrics to be reset quickly. The total statistics cannot be reset.

For a list of all possible VB Commands, enter 'mhelp' at the VBAdmin prompt.
