In order to see the logs on the firewall, if you have ASDM you can go to monitoring---->Logging--->Enable, and that way you will be able to see the logs in real time.
Regarding the DNS inspection, you can check if it is really disable if you do a "show run policy-map" and it is not listed there. The problem comes with malicious code that can be inserted on the DNS packet making it bigger and the inspection would block those packets. Here is something extra that the DNS takes a look at
