How can I verify on a ASA how many anyconnect users are logged on and if I upgrade anyconnect is there away to verify who has been upgraded or not on the ASA?

You can see this information in:
Monitoring>VPN Statistics>Sessions>SSL VPN Client. Any client logging in with an older client will be upgraded to the newe client.
