Using a 350 with an external high gain antenna. Is it recommended to turn off antenna diversity? (ie.configure 350 to use only one antenna).

That is correct..as Bridges have directional (usually point-to-point) antennas.Tejal

Actually, the 350 will be connected to an outdoor 8dpi omni with about 20' of LMR-600. The client will be a Hand Held Products 7400 with Cisco RF. It's my understanding in an outdoor/open space application two diversity antennas are not required or desirable. Just trying to confirm this. Thanks!

You could use diversity antennas outdoors (placed just slightly more than one wavelength apart - 12 cm), but it really won't help you.
If you want more than the max 600 meter range that your stated config will give you (at 11Mbps), there are a few ways to improve that.
