We are currently using RC for the following:
We’re a fairly new install, but we’ll be targeting any process in the company that currently uses a paper trail to manage approvals.

The most common non-IT categories I've worked with are:
Facilites Management - Break/Fix items (windows, toilets, drinking fountains), personnel logistics - cube space, desk, chair.
Corporate Training and Development - Using RC to reserve a conference or training room space for a class OR to enroll in a class. OR a request to create a new training curriculum.

HR - Termination includes Security/Payroll/Travel/IT/Manager tasks, Facility - Moves and Work Orders, Finance - 7 Purchasing Card services/1 adding Vendor Master/ 1 tracking Unbilled Shipments, Continuous Improvement Process - one Division's program for improvement ideas, Manufacturing - access service to a specific server (outside of IT)

We have facilities items in our catalog, and some financial services in the catalog, project requests, on-boarding services, etc. We also have telecom, end user computing, mobility, conferencing services, etc.; happy to expand on any of it if needed.

We are in the process of building more non-IT services into our RC. Current non-IT services in production are: guest registration, travel booking & course registration.
