The model you have to choose depends on the traffic volume in your network, in which can roughly be estimated based on the size of your network (no. of users/network devices/servers/inbound traffic from internet and so on).
CS-MARS came in different capacity - Events/Sec (EPS), NetFlows/Sec (NPS) and Storage.
EPS: capacity to handle max events/sec by monitoring/reporting devices, i.e switches, routers, firewalls, servers via syslog/snmp.
NPS: no of netflow/sec sent from netflow-enabled routers & switches
CS-MARS categories are as follow:
Small business: CS-MARS-20/50
Medium to large business: CS-MARS-100/100e/200*
*depending on network size
Based on your network description, I think you should get at least CS-MARS-20 with 500 EPS, 15,000 NPS and 120 GB (non-RAID) or CS-MARS-50 (higher EPS/NPS and RAID storage).
