We are planning to implement 802.1x and I would like to know if the following end-points (IP handsets and ATA) support 802.1x. If there is supporting CCO links that would be great:

7912
7936
7940G
7941G
7960G
7961G
ATA186

Some of your phones will be OK.  A lot will not.  Here is a link to a document on Identity Based Network Services (IBNS).

https://www.cisco.com/en/US/prod/collateral/iosswrel/ps6537/ps6586/ps6638/whitepaper_c27-574041.pdf

Here is a quote from that document that rules out several of your phone models.

"Cisco IP Phone models prior to Cisco’s third generation do not support X.509 certificates (for example, 7902, 7905, 7910, 7912, 7920, 7935, 7936, 7940 and 7960) and therefore have no road map to support IEEE 802.1X."

I haven't found any direct reference to the ATA, but I doubt it will do .1x.  They just aren't that advanced.
