Add HWIC 1 GE SFP card in Voice Gateway

Hi

I have once Cisco Voice Gateway 2800 series.ie Moving the links from Cisco voice Gateways to Core Switch.
Am planning to add HWIC 1 GE SFP Cards and migrate to Fiber Link during the thanks giving holidays.
Advice me the steps and configuration changes  to be done with less downtime.
Am little bit confused since its a bigger voice network and not to be disturbed
