Do I need to add on the switch/port that connect the Call Manager the command:
auto qos voip trust
I know that the command is used to connect the interface to a trusted switch or router. But can it be done on my publisher and subs. server?

Enabling that on the Call Manager switch interface would be optional. Basically its best to add that "trust" command on ports for VOIP phones on your network. If the CM packets marks important call control packets then its ok to the priority those packets if not, no need.
