Its difficult to track those numbers, this will change based on what you are exactly backing up.
I can speak for CUCM There isn't a sizing tool yet, but here are some data points for a single large cluster:
15k devices, 1 TFTP server: 3-5 GB
20k devices, 2 TFTP servers: 3-5.5 GB
30k devices, 1 TFTP server: 3-6 GB
Backup size is dependent on size of DB (number of devices, etc.) as well as size of TFTP items, so for single luster guesstimate you could scale down from these numbers, or do a test run in the lab and see what you get. And yes, very likely to be non-linear, highly configuration mix dependent, which features you enable, etc.
