I don't think Call Manager keeps records for what you are looking for. From what I have been able to find, CCM only keeps the profile's most recent login timestamp. When the profile logs off, the timestamp is cleared out.
One thing you could try is to search CDR records for the last time that Ext. Mobility profile recieved/placed a call. That may give you an idea if they are still with the company.
