If you have a UC520 you can try Configuration Assistant.
Otherwise, this is the most basic configuration you can use to get CME to work (to save some documentation time):
telephony-service
ip source-address A.B.C.D
max-dn X
max-ephones X
ephone-dn 1

ephone 1
mac AAAA.BBBB.CCCC

You can use the CME GUI as well.

You can also use Cisco Configuration Professional. This is the addition to the UC520 version of Configuration Assistant. I'll be honest - never used this. I know the CLI, however. Here's the product guide, download link is towards the right:
