I am trying to find guidance on how to configure the DSP resources to work in an environment where I can't map the resource to an actual interface with a MAC-Address but only to the Loopback interface. Thanks...

If you mean the dspfarm profile name which by best practice uses the MAC address from the interface you will be using to reach CUCM/CME, that is just a best practice, you can name them whatever you like.
You neven bind the profile to the MAC, you bind to a signaling interface for SCCP.

I must use the Loopback interface as the CME interface and by using that I do not have a MAC Address to bind to in the MTP configuration. that is my question is if using that interface what do i use for the Mac Address.

You can name the transcoder whatever you want. Even your name would work, you don't need a MAC!
