Making test calls is the easiest way to make sure it's working fine. Alternatively using the Real Time Monitoring Tool (RTMT) and looking at the event viewers or alert central can give you a quick over view is any alarms have been triggered to as a basic check.

It depend on what you want to ensure is working, CUCM can provide many functions and testing full system may take some time and warrants developing comprehensive test plan. Developing test plan is driven by requirements/design. so outline what the system requirements were, map them to test cases and execute them. For example:
Requirement 1: Phone should be able to dial international numbers
Test Case: Dial international number and ensure call is router properly
Requirement 2: Calls should be routed to voicemail if not answered within 16 seconds
Test Case: Call DN XXXX and ensure call is directed to voicemail after 16 seconds and connected to proper mailbox
to properly test full functionality you may end up with hundreds of similar test cases, these are just some examples.
