Is there a DHCP option I can use to set the Admin VLAN ID on Cisco IP Phones? I am installing in a network with non-cisco switches, and don't want to have to change the vlan id on each individual phone.

Unfortunatly the phone only supports VLAN assignment through CDP autoconfiguration or Admin. VLAN manual configuration.
Which Switches, we implemete LLDP support for new phones. For third party switches.

these are cheap hp 1800 switches. They do have LLDP, and I saw a brief mention of a new firmware that was supposed to make it work with a voice vlan, but this was with the higher level switches. The 1800s are pretty limited in configurability.
I do have another site with 2600 procurce switches, can I get these to work with the cisco phones and voice vlan better?
