Is there a way to disable the LAN port on Cisco phones running the SIP load?

have you tried to edit the SIP
this is the parameter:
network_port2_type : shut
I'm not sure if this will work but I will try it and post the results.

actually - forget that. I don't think it's possible. Take a look at this:

network_port2_type
(Optional) Configures the device type that is connected to port 2 of the phone.
Valid values are Hub/Switch and PC. Default is Hub/Switch.
Note If the value is PC, port 2 can be connected only to a PC. If you are not sure about the connection, use the Hub/Switch default value. Specifying the PC option and then connecting port 2 to a switch results in spanning-tree loops and network confusion.

I know it might not help - but atleast you don't waste your time AND/OR end up with spanning tree loop.
