Hello,
So when you do updates on CUCM 8 you have to do an upgrade, I thought an upgrade is one thing and update is something else, is it because its a linux server. Why do we an upgrade and not click on update button instead?

Ok, so I'm back home and on my Mac now.
Since you are asking such a basic question, for such a serious operation, I would suggest you hire help for this, and learn from them on the job. Cisco works with partners who can be hired on an hourly basis for just this need.
You have to know that, upgrading a system like a CUCM is not just as simple as installing a file and clicking next. You have to consider all of the following, and maybe more:
I would say, either get help with this for your first time, or build a lab environment, and practice the upgrade in the lab first.
To answer your immediate question: there are two types of "upgrades"
Which one you do, depends on why you are "upgrading" your CUCM.
I.e., An upgrade from CUCM 8.0(3) to 8.5(1) is the second upgrade type.

Are these two upgrades you are talking about similar to windows updates or is like upgrading the windows server OS, because I just want to do updates on cucm 8 and i never done it on a linux server?

Linux appliances are all or nothing.
If you upgrade, you upgrade OS + application (CUCM, CUC, etc).
There's not just upgrading OS or just app.
That's when you use ISO files which are quite large
A COP file is meant to install an extra (language, devpack, FW, etc)
