I need to upgrade a large number of cisco phones spread across multiple sites with varying bandwidth.
Is there any way I can estimate the time it will take to upgrade a specific site based on the number of phones, firmware image size, WAN bandwidth etc?

Table 3-4 TFTP File Transfer Times for SCCP Devices

If not your version just open the SRND from your version in same chapter for specifics.

why don't you enable peer firmware sharing first then perform your upgrades, it will save lots of time when upgrading firmware.
There are dependencies but if your lucky you'll using a similar phone type and thus pulling the image once over the WAN.
