Can I just have someone remotely dial in and record a greeting?
How would they do this?
someone said thye record to a file and upload the file?

You can record a greeting using the Unity TUI as per this doc..it will instruct you on how to setup Greetings Administrator etc

You can record a WAV file, log into the Unity SA and copy and paste the WAV file to the appropriate CallHanlder if it's created.
The other option would be setup the Greetings Administrator for the CallHandler. If a Subscriber is the "owner" of the CallHandler, they can log into the Greetings Administrator, type in the Callhandler Extension (which is normally optional on the profile page) enter in their PIN and then have access to re-record the greeting over the phone the remotely.
But this all has to be setup. It's not turned on by default every time you add a new Call Handler.
We typically set this up for the main greetings. An authorized subscriber can call in and activate the Alternate greeting for the Main greeting after hours. "We will be closed due to weather" or something like that.
