All Cisco Unified IP Phones support HTTPS and SSH support? If not, which models support them?

It depends on which direction you look. You may SSH into a phone and HTTPS out from a phone.
What you tried to achieve?

I want to access to the phone (configuration, logs) through SSH and/or HTTPS. So the direction is administrator --> Phone.

Correction - you can actually SSH and HTTPS into a phone.
