Machine Spec for VMWare Server to run UCM?

I am currently in the process of putting a Demo/Trial system together and was planning on running all of the individual UC components on a VMWare Platform..

Planning on running:

UCM7.0

UCCX7.0

Unified Presence

Unity Connection

Has anybody tried doing this on a Virtualised platform and what sort of spec machine were you running (or would you recommend running)

I was hoping to get away with a Single Processor (Quad Core) workstation type machine with 16Gb of ram and running either W2K3 or Vista...

Any advice?
