Well, one thing would be if you didn't save the configuration and the router reloaded for some reason. While I have seen MGCP commands go "bye bye" without human intervention, I have not seen that with a DSP profile config.
Check uptime of the device: "show version"
Check the start up config to see when it was last saved: "show start"
If using tacacs or radius, check your accounting logs to see if there are clues there.
If you need a time stamp, check your application syslog on CUCM and/or RTMT Alert Central to see when the D-channel and B-channels went off line.
