We have a 7835 Server w/Call Manager and a 7835 Server w/Unity Connection. They are sitting on a table to be moved into racks. Is it just a matter of pressing the power button and moving them into the racks and pressing the button to bring them back up or do I need to do something else with their shut down??

I would suggest that you properly shut them down. Connect a monitor and keyboard , if its a windows box (for both platforms) then you can do that from Start-> Shutdown menu.
If its a linux box, you have to either do it from the web interface (OS administration) or from command line (Utils system shutdown).

Can I do one of the two below and which one is better to use?
Web Interface: Go to OS Administation-Settings-Version-Shutdown
Use PUTTY application and from the command line type Utils system shutdown?

i usually use command line, i am a CLI guy...either ways work.
