In planning a new deployment, I assume we should go with 6.1? Reading the datasheet, it doesn't appear I "need" any of the new features in 6.1. But I assume it's better to start off with the latest release?
Any reason to go with 6.0.x instead?

Yes, maybe you can't see any major functionality improvements but 6.1 contains many bug and security fixes.
Please use Bug Tool Kit and see how many bugs was fixed by Cisco

6.1.2 has proven stable in sevaral dozen deployments we have done, so I would recommand this version.
There are some feartures added in version 6.1 which you can read about in the release notes, the big one is the DB resiliency, where if your Publisher goes down you still have user features such as call forward all, MWI, EM, etc available.
