We are using Unity 5, and several users reported that when they try to check their voicemail, after they heard their name, it takes time to hear their voicemail message, sometimes it takes 10 seconds, sometimes it takes more than 1 minutes. Once they heard their voicemail, next time when they try to check in the same day, it works fine
It happens intermittently, when it happend the other users did not been affected

I would suggest taking a look at the application logs to see if there are any indications of losing connection with one (or more) Exchange servers. While there are a few services you can restart to reconnect, it may also be more straightforward to do a good ol' fashioned reboot during a maintenance window. This will give Unity a chance to resync with the directory and reconnect to Exchange.

Does the following log mean the unity server lose the connection with the exchange?
The following Information Store is currently off-line:
CN=EXCHVS6_SG16_Database,CN=Storage Group 16,CN=InformationStore,CN=EXCHVS6,CN=Servers,CN=Exchange Administrative Group (FYDIBOHF23SPDLT),CN=Administrative Groups,CN=***,CN=Microsoft Exchange,CN=Services,CN=Configuration,DC=****,DC=***,DC=***,DC=**

Yes, that log indicates that Unity has lost connectivity with a particular information store. There should be a corresponding log for when connectivity is restored and Unity should try to sync information. If you are seeing connectivity loss frequently then this will definitely cause problems.
