Does any version of Unity support Exchange 2007? If not, what are the plans for the future.

No current version supports Exchange 2007. The plan is for Unity 5.x being released later this year to have support for 2007.

I know Exchange 2007 supports voice message natively and we can move call handlers to IPCC servers. If so, why can't we eliminate Unity and just use Exchange 2007 as voicemail - just a thought.

Exchange 2007 UM is not as feature rich. For instance you can't mark a message as private, and it does not support remote message monitoring that Unity 4.21 supports. It also requires a third party device to light MWIs, has support issues with faxes due to a codec mismatch with CCM and natively works with only CCM 5.x and higher. It does have a cool voice enabled inbox though.
