Not sure I quite understand what you are trying to do. Are you trying to modify the calling party to be email@example.com or called party to be firstname.lastname@example.org. If its called party, you will have to create a SIP route pattern with something like *.* and use the route list that can routes call to VCS.
If its calling party, there is a setting on the SIP profile. Its called "Use Fully qualified name for routing requests", check this and reset the trunk. This setting should be checked on the SIP profile that is assigned to endpoints as well and also on the SIP profile associated to VCS. HTH.
I get it working now with transforms on VCS but becouse I was already using the vcs-interop sip normalization script was trying to change the domain inside the script... But I think that I´ll lost more time doing something that it´s easily done inside vcs...
