can I use a VWIC2-1MFT-T1/E1 to connect to a Telco PRI? My 3845 is showing a Service-Engine1/0 but not T1 controller.

Sure you can. Since its a t1/e1 card, it can be configured as a t1 or e1 card. You need to use the card type command from global configuration mode and configure the controller as a t1 or e1. Once this is done, you will see the controller interface show up in running config. Note that if you cofnigure the port as a t1/e1 once, to change from t1 to e1 or vice versa, requires a reboot.

This might be off subject but do you plan on running mgcp on your router and link it up with your Call Manager?
