You can either the 2960 or the 3560 as a replacement option.
The Main difference between the two is that a 2960 is a pure layer 2 switch whereas you get layer 3 capabilities with a 3560.
Both switches support fiber SFP modules. The connectivity would depend on the network setup. I would properly connect each switch directly to a Layer 3 switch via a fiber link.
You can also stack these switches(i.e connecting one switche to the other and so on). This setup is not suggested as it increses the oversubscription ratio which is recommended to be between 1:15 or 1:20
